Bruschetta

Since I was making a pretty simple dinner the other day (Peorogies and Kielbasa) I decided to make some bruschetta to go along with it.


I did not have recipe so this is all very approximate
3 beefsteak tomatoes - plum would be better, but this is what I had
6 leaves fresh basil chopped
1/3 cup sun dried tomatoes
1 tsp olive oil + extra for the bread
2 tbsp balsamic vinegar
garlic clove
1 french baguette or similar Italian bread sliced diagonal about 1/2 inch thick

parboil your tomatoes (drop into boiling water that has been removed from the heat - let sit for one minute remove)
peel off the skin and seed
I then put the tomatoes, basil, sun dried tomatoes in the the food processor and gave it a few whirls on chop.
mix in the olive oil and balsamic vinegar and salt and pepper to taste.

place slices of baguette on a cookie sheet and drizzle with EVOO bake to taste. Remove from oven and rub with garlic clove.
Put bruschetta on top and enjoy
