Chicken Parmesean




This turned out scrumptious!!! Steve said that it looked like something you would get at Macaroni Grill. Tasted like it too!!! I didn't measure anything so this is all very much approximate!!
Chicken
2 large boneless skinless chicken breast - rinsed and pounded thin
1/2 cup seasoned (salt and pepper) flour
2 eggs - beat
1/2 cup Italian style bread crumbs
oregano
rosemary
parsley
chives
(no idea how much I used of the seasonings - just a good couple shakes)
marinara sauce - about 1/2 cup, probably less
1 cup mozzarella

Make a dipping station with the flour, egg, bread crumbs - with seasonings mixed into the bread crumbs. Dip the chicken first in the flour to coat then into egg and onto bread crumbs. Place in a skillet with hot oil and cook until done - only turning once.
Place in a baking dish - spoon on some marinara sauce. Cover with mozzarella cheese and place in 325 degree oven until cheese is melted.
I served this with a side of spaghetti - cheated and used a jarred tomato sauce on this one.

The chicken turned out great!! Wish I did measure the seasonings because it was just right!!
Steve was a very happy and full camper!
